Hi Donna ... don't believe everything you read. If Splenda were really causing cancer, it would be pulled from the market. A lot of this stuff is "spin" put forth by the sugar industry. Sugar feeds cancer and is the cause for most all of today's health issues ... FAR and away worse than Splenda, any day. That said ... I don't really use Splenda, but more because of the dextrose and maltodextrin they mix it with (glucose). Typically, I used Swerve Sweetener. If you want to make your own brown sugar, you can take some Swerve and mix it with a little bit of yacon syrup. This will give you a non-glycemic, all natural, non-gmo brown sugar substitute. Delicious! I hope this helps! :)

They've come out recently and said Splenda causes cancer in lab rats... so in the recipes that it's called for... what can we replace with? Stevia seems to be the only sweetener that doesn't have side effects... at least yet... ???

This bread pudding recipe rescued me today. I tried a recipe for LC chocolate muffins. They looked good and had great chocolate flavor but they were incredibly dry. No one liked them. It just seemed like such a waste to toss them, so I found your recipe on Pinterest and used the chocolate muffins as the bread. Only tweak was to leave out cinnamon and add a little almond extract. This is SO good! Really took a loser of a recipe and turned it into a winner. Yummy stuff!
