You have been sooo missed! This is terrific info...I always feel like I'm chatting with an old friend when I read your posts. Your low-carb style is so relaxed, as in "eat when you're hungry and until you're full." Do you plan the menus using macros, calorie counts, etc??I'm in a huge stall and need to shake it up.

Hi Christine. Thank you for the kind words! No, I don't pay a lot of attention to anything other than the carb count. You can increase your fat to boost satiety, which often naturally decreases the overall calorie count, but that's more something I see as a trick in a kit of tools, than a full dietary lifestyle (strictly my personal opinion for myself). You can also obviously reduce calories or increase exercise (reduce stress, drink water, get good rest, etc.). However, I mostly just try and keep meals to below 10 net carbs per meal ... and that's about it. This is a great and relatively varied place to start and to live and it's what I think about when planning, but even then I'm not always fanatical about it. I was in the very beginning and that experience taught me what foods work for me. Now, I go mostly off experience and intuition, but ... I do pay attention to carb counts. I hope this helps! :-D

Glad it's working for you ... and glad to be back! :D

Once again you have outdone yourself. Over the years, I have always been amazed at how thoroughly you cover each topic. You give at least 200% to a subject. I also do some of this cooking in bulk and freezing and just wish I had more freezer space (but we have 4 dogs (some people consider them giant breeds) who have taken over our upright freezer with their raw food. I keep making my case for a nice walk-in freezer or a second upright, but the feedback is that I would just fill that too and want more space. Whenever I cook something, I make 4 times as much as I want, eat one and freeze 3. Not as organized as you with your do it all in two days method, but there is always lots to choose from. (And the usual nag---I need more ice cream recipes, which is what you get when you flaunt them in your freezer like that...lol)
