Asparagus finally went on sale and I got the opportunity to make this! Wow, what an amazing side or main dish, so versatile. We ate the green beans the other night for something else so I subbed those with romaine lettuce. The fresh herbs I used right out of my garden were lemon thyme, basil and the one that made all the difference and in my humble opinion and confirmed by my husband, was the tarragon. Tarragon items to be such a underused herb. Also didn't have fresh lemons so I used a lighter vinegar. I'm already thinking of when to make this again. Next time grilled chicken on top! Thank you, I'm looking forward to following you.
