I have learned this from my best friend Giuseppe who is straight from Naples, sauté your onions with a 1/2 tsp crushed red pepper flakes and cook until the onions sweat but not burnt, add the garlic and do not burn garlic, add your sauce, (Pastene is my favorite), add salt, pepper, fresh basil, cup of Chianti and bring up the heat to medium, cover the pot so the flavors don&#039;t escape and constantly stir until a med simmer is accomplished, simmer for 20 minutes longer, and uncover on a slow simmer to finish for another 15 minutes and constantly stir the pot , add a half tsp of baking soda, yes baking soda and give it a good stir. remove basil stems and stir and serve, I have been making this excellent sauce for over 30 plus years and people beg me to make it. don&#039;t add sugar to your recipe does nothing to sweeten it. the baking soda removes the acid and makes it sweet. you will never burp up this sauce, guaranteed. ENJOY

					<description><![CDATA[I do make this marinara sauce all the time without the onions is very very good, I do put basil at the beginning &#038; at the end, an easy way to mush up the tomatoes pour them in the pan careful does splatter once they are worm I do use the potato musher one less pot to wash, also last long in the freeze, any sort of whole tomatoes works for this recipe, Muier Geln are good or I do buy any whole cans tomatoes when they are on sale.
