This was the best low-carb mint chocolate ice cream I’ve ever made. Most of the baked goods low-carb stuff I make is mediocre, but adequate – if I remember there is no sugar. This was not that. This was like the real deal – gourmet version at that.

Can you possibly, pretty please, give us amounts of peppermint extract or peppermint essential oil, and more sweetener? I don’t use products that have Sucralose and sodium benzoate in them... but your recipe is soooo appealing... I, too, eat ice cream almost every day!
