Have you folks tried allulose? It has baking and freezing qualities more similar to cane sugar. It also tastes pretty good but it similar to erythritol in that it is only 70% as sweet as sugar. It is a monosaccharide but a rare sugar so not a sugar alcohol. Ordinarily corn (try for non-GMO) undergoes an enzymatic process using a microbe (genetically designed for the task) to arrive at the exact same molecule that exists (in very small quantities) in figs and raisins. We just need to make up that 3/10 sweetness with stevia or monk fruit. I dislike the cooling/hard-freezing/non-browning/grit of erythritol and do not tolerate inulin/ogliosaccharides very well. I also have pets. I have purchased powdered allulose monk fruit blends from Wholesome Yum (now available at Amazon) but prefer stevia to monk fruit and wish to blend my own at a lower cost. Hi Helen!  If you&#039;re looking for bulk, you can use erythritol as the best overall bulking agent, or xylitol.  However, it sounds like you don&#039;t tolerate this well.  So … moving on … you could also use allulose or tagatose (or a blend of both).  You could also add a touch of erythritol or xylitol, as a small amount may be suitable and help round it all out.  

You could also boost the amount of monkfruit drops and use a blend of these listed options, then additionally add some inulin or polydextrose.  Those are essentially treated as fiber in the system (though PolyD can result in some explosive situations for delicate situations [thankfully a tolerance can be built up]).  

If you have a delicate system, my suggestion would be to purchase the smallest possible amounts of these ingredients, then test them on yourself in very small amounts.  If you have no problem, increase the amount by a bit and continue testing.
