Beef Pineapple Teriyaki Skewers

Sometimes I like to play with fire, and I don't mean the hot orange and blue stuff. There are things that most people following a low carb way of eating probably shouldn't eat a lot of, even if it's a whole natural food. Obvious ones are potatoes and rice, but fruits often fall into that list of taboos. Pineapple is amongst one of the sugary sweetest fruits out there! But ...

BUT! ... I consider this to be a small appetizer. Just don't eat too much! Being an appetizer, the portions are small and the pineapple is tiny. Portion control is built into the dish. It's just enough to satisfy any sweet tropical cravings that you may have been having, without much of an impact on your blood sugars.

This is a sweet grilled beef and teriyaki skewer, where the teriyaki is sugar free, but the pineapple's natural fruit sugars can get a NICE rich charring for that deep glazy caramelized flavor.

  • 1 1/2 lb beef tenderloin sirloin or ribeye, cut into bite-sized cubes
  • 1/4 cup sugar free teriyaki
  • 3/4 lb fresh pineapple cut into 36 cubes
  • 18 each bamboo skewers soaked in water for 30 minutes
  • salt pepper and chili flakes, to taste
  • 2 tbsp coconut oil for grilling
  • 2 tbsp sesame seeds toasted


  • Mix together the beef, pineapple and teriyaki in a bowl.
  • Let marinade in the refrigerator for an hour.
  • Skewer one cube of pineapple, per skewer. Follow this with 2 or 3 cubes of beef.
  • Pre-heat a grill.
  • Season the beef with salt, black pepper and chili flakes.
  • Once the grill is hot, brush it with coconut oil and quickly place your beef on the grill.
  • Grill each skewer, until it's nicely seared and cooked to your desired doneness.
  • Serve!
