For years, I lived down in Mexico with a broken microwave. I’d read and read about the “One-Minute-Muffins” in all the various low-carb forums, but never had the opportunity to TRY one! I finally moved into an apartment with a working microwave and gave one a shot. O … M … G!!!
Since then, I’ve been making all sorts of flavors! This is about my 8th flavor combination, so far (on the website, anyway). I wanted to try something different, though. No more SWEET flavors, and no just plan breads, either. I wanted something interesting, unique and special! The kind of think you could serve in place of a bread basket during a nice meal and NO ONE will question you about the lack of “bread” … they’ll just gobble THESE tasty things down and beg for more!
I chose to go “savory” this time, starting with a zucchini base. I then incorporated bacon, parmesan, fresh herbs and a simple topping of cream cheese!
Pretty, tasty and … pretty spectacular, too!
Savory Zucchini, Bacon and Herb OMM

- 2 tbsp golden flaxseed meal
- 2 tbsp almond meal
- 2 tbsp parmesan cheese grated
- 1/2 tsp baking powder
- 1 dash salt
- 2 tbsp grated zucchini
- 1 tbsp chopped toasted pecans
- 1 large whole egg
- 1 tsp bacon fat melted
- 1 tbsp real bacon bits divided
- 1/2 tsp chopped fresh thyme divided
- 3 tbsp full fat cream cheese warmed
Instructions
- In a wide mouthed coffee mug, combine your flax, almond meal, parmesan, baking powder and salt. (I like to grease my mug first, but I don't think it's necessary)
- Squeeze the water out of your zucchini, by squeezing it within your fist, over the sink. Un-clump the zucchini, so it is back in strand form.
- Mix in your zucchini, pecans, egg, bacon fat, half of the bacon bits and half of the thyme.
- Microwave on high for 60 seconds (90 seconds if using a weaker microwave)
- Garnish with a nice layer of cream cheese and then sprinkle the remaining bacon bits and thyme on to the top!

DJ…your recipes are the best ever and have made our low carb life so much more satisfying. I wish you had a show on cooking network! I saw this recipe and only had bacon to use so I made one with bacon, bacon grease, cheese, and pepper. I thought my husband would turn up his nose over the flax seed meal but having buttered "bread" with bacon inside made him speechless. He is a fan! Thank you for posting so many easy recipes for us "simple" cooks.

Hi Unknown … um … not sure. I assume several of them do. I think I have one or two in the 5th volume of the Low Carbing Among Friends serious. I know that there are literally hundreds of recipes on the internet, if you just google it. I hope this helps!
DJ, I have to tell you, you have given me a lot of fuel to stay on my low carb lifestyle. Your omm are it. I have made every recipe turned about 15 people on to your page and say this guy along with low carb friends has your rescue.! I just want to really thank you for your hard work and help. I showed my mom your profile she said if he can do it so can you. 50 lbs now and still going. Sugar readings from 300 to 120 and feel great! Still have issues but who doesn’t? Lol If you ever feel down just remember those you help! I also have cooked my whole life left the profession. Hmmm maybe consider a low carb restaurant if I lived in a bigger demand area. Anyway just wanted to try and express my appreciation. And thank you again.
